Why It’s Special: Chiapas is the main growing region in southern Mexico. It is home to cloud forests that thrive in the highland elevations and are an ideal location for growing coffee that is well known for it's chocolate cups that feature a pleasant acidity in the finish. A few years ago we were fortunate to be able to source our Gold Dalia as an organic produced coffee and it continues to be in our stable of regional selects year in and year out. We can always count on our suppliers to find us these full bodied cups that ooze chocolate and sugar browning notes on the table. This coffee works well from light-medium all the way to a dark profile. It's a versatile utility player on any roaster's roster. Our supplier's on the ground agronomist supports the farmers with good agricultural practices to ensure their resilience year after year.
